Golden Butter Cake with Chocolate Marshmallow Frosting

6 egg yolks
1 cup milk
2 tsp. vanilla
1 1/2 cup sugar
1 Tablespoon + 1 tsp. Baking Powder
3/4 teaspoon salt
12 Tablespoons butter
3 cup flour

Mix yolks, 1/4 cup of the milk & vanilla. Put all dry ingredients in mixing bowl. Beat in butter till like crumbs. Beat in remaining milk. Now slowly beat in egg yolk mixture. Beat till smooth. Pour into a greased & floured 9x13 pan & bake 350 degrees 25 -35 minutes. Poke holes in cake with an object about the diameter of a drinking straw. Pour Chocolate Marshmallow Frosting over warm cake. Smooth for an even finish.

Chocolate Marshmallow Frosting
3 cups semi sweet chocolate chips
1 bag marshmallows
1teaspoon vanilla
dash of salt
1/2 to 1 cup of light cream
2 cups powdered sugar
Microwave chocolate chips on 50% power till melted about 2 minutes. Stir 1/2 thru and again when melted to smooth. Add marshmallows & microwave full power till melted about 1 1/2 minutes. Stir till smooth. Now beat in cream & sugar till texture is frosting consistency. Add more or less as you prefer. Frost warm cake. Frosting will pool down in holes and smooth over the top. Delicious!

My Mom who passed in 2019. She is my inspiration for all my recipes. She always made 10 types of cookies + candy + party mix at Christmas. 1 year she made over 300 dozen cookies. I carried on her tradition & learned at her feet helping her as soon as I could stand up as a child!

Apple Crumb Pie Surprise Muffins

                                                                              


Delicious Muffins with ooey gooey fresh Apple Pie filling inside & topped with sweet spicy crumbs! Yes, Apple Pie in a muffin! 

Apple Pie Filling:
4 Nice Sized Apples peeled cored & diced in small dice. Place diced apple pieces into 2 TBS lemon juice & toss.
3 Heaping & I mean heaping tablespoon of sugar
2 Heaping & I do mean heaping tablespoons of brown sugar
6 TBS Butter
1 Tsp Cinnamon
1 Dash of Salt
1/4 Cup Cold Water & stir in 2 TSP Cornstarch
Sautee apples in 3 TBS butter until soft. Add the sugar, cinnamon ,& salt, & cook. Once nicely combined add just enough of the water cornstarch mixture to thicken your filling. Stir & cook until bubbling & nicely thick. Now stir in 3 more TBS of butter & stir until bubbling & thick. Turn off the heat & let mixture cool until your muffin batter is ready!

MUFFIN BATTER:
1 Cup Sugar
2&1/2 Cup Flour
1 TBS Baking Powder
1 TSP Salt
1 TSP Cinnamon
2 Beaten Eggs
1/4 Vegetable Oil
1 Cup Plain Yogurt
1 TSP Vanilla
Stir all the dry together. Mix well. Now add all the wet ingredients at once to the dry mixture & stir with a heavy spoon until combined well.  Take your muffin/cupcake baking pan & spray the top well to prevent the muffin tops from sticking. Line with cupcake liners. Place 1 TBS of batter in the bottom of each lined well. Smooth out & try to put a dent in the middle of each muffin. Now divide your apple mixture among the 12 well you have the batter in & dented. You will have just enough for each muffin! Now cover each muffin with more batter spreading out over the apple filling to seal each edge. Now top with those luscious crumbs!

CRUMBS:
1 Cup Flour
1/3 Cup Sugar
1/3 Cup Brown Sugar
dash of salt
1 TSP Cinnamon
1 & 1/2 TBS Cold Butter cut into small pieces.
Stir all the dry ingredients together mixing well. Add the butter & cut it into the dry with a fork until you have fine crumbs. Now spoon those crumbs over each muffin pressing down lightly to help them stick.
BAKE in PREHEATED OVEN for 20 MINUTES. Let cool & DEVOUR!

White Pizza with Chicken, Spinach, & Mushrooms!

                                                                               

Delicious White Pizza made with Chicken, Spinach, & Mushrooms! This is easy because you cheat with a jar of bought Alfredo Sauce! Do not tell & nobody will know! ENJOY FOODIES! This makes 2 huge 18 inch pizzas!

Crust:
3 Cups Bread Flour
2 TSP Sugar
1 Packet Yeast = 2 & 1/4 TSP.
Mix all together. Stir in 1&1/3 Cup Cold Water. Let sit for 10 minutes. Now add 1TBS Olive Oil & 1 TSP Salt. Stir to combine. Turn out on a lightly floured board, be sure to use Bread Flour, & lightly knead adding more flour as needed. Lightly oil a deep bowl & place your dough, turn once to coat both sides with the oil. Cover & let rise until doubled about 1& 3/4 hours. Once risen punch down, lightly flour a flat surface, I do this right on my large baking sheets. Divide dough in half & roll out dough until it is about an 18 inch circle. Preheat oven to 450 degrees. Position you oven racks to the second to lowest spot in your oven & the other in the middle spot! Once both pizzas are rolled out, pinch  the edges to get that nice pizza crust edge! Now top with the topping you choose! I used the following:

1 15 Ounce jar of Classico Roasted Garlic Alfredo Sauce, divide between both pizzas,
Next top with diced or shredded cold boneless skinless cooked chicken, about 1/2 pound per pizza
1/4 Cup Spinach Fresh Or Frozen Spinach that has been thawed, per pizza
Sliced canned mushrooms drained, I divided 1, 15 ounce can between the 2 pizzas. Now top with 2 cups shredded Pizza Cheese, use your favorite! Sprinkle the top with Italian Seasonings. Bake 18 to 22 minutes place your oven rack to the second to lowest position to get a crisp browned bottom pizza. I usually place one pizza in the middle of the oven & then switch the 2 pizzas positions so each get that nicely browned crispy crust! Makes 2 huge 18 inch pizzas! Make both or freeze one for later! ENJOY!

Raisin Bran Muffins

                                                                             

Yummy Raisin Bran Muffins! Moist full of flavor & Huge!

1Cup Sugar
1 & 1/2 Cups Flour
1 TBS Baking Powder
1 TSP Salt
2 TSP Cinnamon
2 Beaten Eggs
1/4 Cup Vegetable Oil
1 Cup Milk
2 TSP Vanilla
1 Cup Bran Flakes
1 Cup Raisins saved until the very last step!

Stir your flour, baking powder, salt & cinnamon together in a large deep bowl, mix well. In a separate bowl mix the bran flakes in with the milk & let it sit until flakes are soft. Add the beaten eggs & combine well. Now dump this into your flour mixture, add the remaining ingredients. Stir very well. Now stir in 1 Cup of Raisins. Mix well. Divide batter between 12 muffin wells that you line with paper cupcake liners. Sprinkle tops with white dsanding sugar for extra crunch & sweetness. Bake in as preheated 400 degree oven for 20 minutes! ENJOY!

Doubly Diabolical The Devil Made Me Do It Chocolate Brownies

                                                                         

One huge pan of brownies with that sinfully dark chocolate that you know you have been craving! Makes a pan 11 inches by 15 inches full of chewy, moist sinful brownies! The Devil Made Me Do it, but I am glad I did!

1&1/3 Cup Softened Butter
2 & 2/3 Cup Sugar
1 TSP Vanilla
4 Eggs
2 Cups Flour
1 Cup Hershey's Extra Dark Baking Cocoa
1/2 Tsp Salt.                                                                   
12 Ounce Bag of Nestles SEmi Sweet Toll House Morsels
Spray or grease your pan & preheat oven to 350 degrees.
Beat Butter until fluffy, add sugar & beat that until it is fluffy. Now beat in eggs & vanilla. Stir all your dry ingredients together & then lowly beat a little at a time into your butter mixture. Beat until all is blended well & your batter should be fluffy. Now stir in the Nestle Chocolate Chips. Spoon batter into your prepare pan & smooth out to make even. Bake 35 to 45 minutes check at 35 minutes insert toothpick or sharp knife it should come out clean with no wet batter & brownies should be slightly puffed up with a crackle surface! So easy, so good! It looks like a lot of brownies but for some reason they just disappear in no time at all! ENJOY!

Caramel Apple Goodie

                                                                         

Caramel Apple Goodie is not quite Apple Crisp & not quite a Cobbler it is somewhere in between & that is a GREAT place to be! Super easy to make & great warm or cold. Add Whipped Cream or Vanilla Ice Cream if you desire! DELICIOUS!

2 Large Apples or 4 small, peeled, cored & sliced thin like you would for pie.
2/3 Cup Sugar
3 Heaping TBS Shortening
1 & 1/ Cups Flour
1/2 TSP Salt
1 TSP Baking Powder
1 Large Egg beaten well use 2 if they are small
1/2 Cup & 2 TBS Sour Milk
1/2 TSP Baking Soda
2 TSP Vanilla
2 TSP Cinnamon
1 Cup Caramel Sauce I used Smuckers
Grease a deep 9 inch pie plat & preheat oven to 350 degrees
In a large bowl whisk together shortening & sugar until fluffy, you can use a mixer but by hand did just fine. Add the beaten egg & beat again. Stir the baking soda into the sour milk & stir until it foams up. Now beat that into your shortening mixture. Stir the remaining dry ingredients together & then stir them into the batter. Now stir in the prepared apples & stir well. Dump this into your prepared pie pan. Pour the caramel sauce over the top evenly over everything Now make these fabulous crumbs!
CRUMBS:
3/4 Cup Brown Sugar
3 Heaping TBS Flour
1 TSP Cinnamon
Dash of Salt
3 TBS Cold Butter
Stir the dry together, cut in the butter to make crumbs. Spread the crumbs evenly over your apple batter. Bake at 350 degrees 35 to 45 minutes until batter is set & apples are tender! Serve warm or cold with whipped cream or vanilla ice cream if you wish! SO GOOD! 

Cowboy Pork & Beans!

                                                                         
Cowboy Pork & Beans is a meal, a very simple, easy to fix hearty meal! Crock-Pot or oven baked this is great way o make Pork & Beans into the main dish! I already have Cowboy Beans made with burger on this blog but the pork version is great too! ENJOY!

2, 28 Ounce size of Baked Beans, use your favorite I used Bushes Original
1 Large Onion Chopped
6 Large Potatoes Peeled Chopped in  large bite size pieces
2 Pounds Pork Loin cut in large but bite size pieces
1/3 Cup Ketchup
1/3 Cup Brown sugar
2 TBS Chopped Parsley
Dump everything into the crock-pot & cook on low 6 hours. Or place everything into a large deep casserole cover & bake at 350 degrees for 2 hours uncover for the last 1/2 hour, stir & return to the oven for that last 1/2 hour or until potatoes are fork tender. Ring that dinner bell & watch your cowboys come running for the grub! Serves 6 large portions!  Just cut recipe in 1/2 for 3 to 4 people!

Midnight Silk Chocolate Pudding

                                                                         
Silky Smooth Dark Chocolate Pudding, the kind Grandma use to make! 

5 Cups Whole Milk
6 Tbs Heaping of Cornstarch
1/2 TSP Salt
1/3 Cup Hershey's Special Baking Cocoa Powder
2 Well Beaten Eggs
4 TBS Butter
3 TSP Vanilla
In large saucepan stir together all the dry ingredients. Now whisk in the milk, Cook over medium heat stirring or whisking until slightly thick & bubbling, be careful not to scorch the mixture. Once bubbling & slightly thick, beat a spoonful of the hot mixture into the beaten egg, add spoonfuls as you beat until you have about 1&1/2 cups of mixture. Now beat this into your saucepan mixture & continue to stir & cook until mixture is thick. Turn off the heat & stir in the butter & vanilla. Pour mixture into a bowl & refrigerate until cool! This makes 8 large servings, just cut recipe in 1/2 for less pudding but you will be sorry you did not make the bigger batch!

Glazed Potato Cruller Donut

                                                                         

Hungry for a donut? These are fast & easy! DELICIOUS!
1 Cup Mashed Potatoes, I cheated & made instant!
1 Cup Milk
1 Beaten Egg
1 TBS Shortening, melted
1 Cup Milk
1/2 TSP Salt
1/2 Cup Sugar
1/4 TSP of Nutmeg or Ginger
1 TSP Vanilla
3&1/2 TSP Baking Powder
4 Cups Flour
Shortening for frying you want about 3 inches deep
In large bowl stir together the flour, baking powder, salt & ginger or nutmeg. To the mashed potatoes stir in the beaten egg, the melted shortening, sugar & vanilla. Now stir in the milk alternating with flour mixture. Stir well. Now dump dough out on a floured surface & knead for a few minutes. Pinch off small egg size pieces & pat into oblong shapes about 1/2 inch high & 3&1/2 inches long. Fry a couple at a time in a deep frying pan, I use my black iron skillet. Let brown nicely on one side then flip over each donut & fry the other side until golden & donut is puffed up. Remove from oil, drain on paper towels. Continue frying the remaining donuts. You should have 12 to fry all together. Once fried mix up your donut glaze & dip each donut, flip to get the other side & then place on clean surface for glaze to set up! These are done from start to finish in about 1/2 hour! SO GOOD TOO!
GLAZE:
2/3 Cup Butter
Dash of Salt
1 TSP Vanilla
2 Cups Powdered Sugar
Hot Water enough to get glaze consistency.
Melt Butter in saucepan. Add salt & vanilla, stir Now dump in powdered sugar & stir. Now add hot water a few TBS at a time stirring & cooking until you get a thin mixture but not watery. Cook & stir, bring to a full boil. Remove from stove & dip each donut one at a time flipping each one one time to coat. Or you could skip the glaze & just powder them with the powdered sugar or dip each donut into melted butter then into sugar or into cinnamon & sugar! ENJOY!

Mac & Cheese with Chicken & Spinach

                                                                         
Mac & Cheese loaded with chunks of white meat chicken & spinach, or use broccoli if you do not like spinach! 

2 Large Boneless Skinless Chicken Breast Raw cut into bite size pieces
14 Ounces of Elbow Macaroni cooked according to package then drained
8 Ounces Spinach Fresh or Frozen that is thawed or Thawed Chopped Broccoli
4 TBS Butter
4 Heaping TBS Flour
4 Cups Milk
3 Cups Shredded Cheddar Cheese 
Seasonings , Ground Red Pepper, White Pepper, Salt, Onion Powder, Garlic Powder, Chopped Parsley Flakes
2 Cups Bread Crumbs
2 TB Melted Butter

Cook Macaroni & drain In a saucepan melt the butter, whisk in the flour then whisk in the milk, Cook & stir until thick & bubbling. Remove from heat & stir in the shredded cheese, & seasonings to taste. 
I a large deep casserole that you buttered, dump in the cooked Macaroni, the cut up Chicken & thawed Spinach or the thawed Chopped Broccoli. Now stir in the cheesy goodness. Sprinkle the Bread Crumbs over the top & sprinkle a dash or 2 of each seasoning. Now Drizzle with the melted butter. Bake in a preheated 350 degree oven uncovered for 1 hour. Makes 6 large servings!

Amish Wedding Supper Pie Version Two! Made with my Pretzel Stuffing!

                                                                         

This is Amish food pure 100% Amish eating at its' best! This is a variation of an Amish Wedding Supper that I put into a pie shell! Hearty rustic delicious!

Pie Crust:
2 Cups Flour
1/4 TSP Salt
2 TSP Sugar
1/3 Cup Cold Butter
1/3 Cup Shortening
4 to 5 TBS Cold Water
Stir all the dry ingredients together Cut in the butter & shortening to make fine crumbs. Now stir in enough cold water to make the dough come together. Divide into 2 even balls. Roll one out for the pie & freeze the other or use to make Cinnamon & Sugar Roly Polys. The crust for this pie needs to be large enough to fit a deep 9 inch pie plate. Line the plate with the dough & fill with the following.
PIE FILLING:
1&1/2 cups cold leftover stuffing/filling/dressing
1 Cup Leftover Cooked Vegetables
3 Cups Cooked Diced Leftover Chicken/ Turkey/or Roast Beef
1&1/2 Cups Cold Leftover Gravy
4 Cups Leftover Mashed Potatoes, I used my Cheesy Mashed Potatoes
First layer in your unbaked crust is the stuffing, spread evenly. Then spread 1/2 Cup of Gravy over the stuffing. In a bowl mix the leftover meat, vegetables & gravy together then spread that over the stuffing gravy layer. Now spread the mashed potatoes over the meat layer. These spread better if lightly warm, so just warm them in the microwave for about 1 minute on high. Now sprinkle whatever seasonings you like. I did Pepper, Parsley & Sage. Bake in a preheated 350 degree oven for 1 hour & 20 minutes! AMISH EATING IS YUMMY! 

Pretzel Stuffing A very PA Dutch idea!


Pretzel Stuffing? Why not? In Lancaster Pennsylvania we love our pretzels! Bread was hard to cone by with the COVID19 crisis so I thought, hmmm I wonder if pretzels would make good stuffing? Yes they did! ENJOY!

4 Cups of Utz Sourdough Nuggets broken into coarse large crumbs
6 TBS Melted Butter
3 Ribs Celery chopped
1 Large Onion Chopped
3 TBS Chopped Parsley fresh or dried
2 TSP Ground Sage
2 TSP Onion Powder
2 TSP Garlic Chopped
1 TSP Pepper I use White Pepper
3 Large Eggs Beaten
1 Cup Milk
Melt the butter in saucepan or in a large bowl in the microwave I use 45 seconds in the microwave. Add the chopped veggies & all the seasonings & cook until tender. I microwave I cooked them on high for 3 minutes, stirred & cooked another 3 minutes. Dump into the bowl or saucepan the broken pretzels, now stir in the eggs & milk. Let sit for about 20 minutes & then stir again. Now stuff the bird or butter a casserole dish. Roast chicken as you normal would. I roast mine at 350 degrees uncovered 1 hour with about 1&1/2 cups water in the bottom of the pan,then covered 1 hour uncover & cook another 15 minutes. If making stuffing in the buttered casserole dish bake 45 minutes covered at 350 degrees then uncover & bake another 15 minutes! Great slathered with gravy! If making a large bird like a turkey double this recipe! The gravy was amazing too Thank you UTZ for making a great pretzel!

Peach Snack Cake with Buttercream Frosting

                                                                         
What a great cake for snacking. Makes one 9x13 cake that will begone before you know it! Moist, flavorful just a great different cake for when you just have to have a piece of cake! ENJOY!

Here is the 9x13 cake frosted with butter cream frosting!



CAKE:
3/4 Cup Softened Butter
3/4 Cup Sugar
3 Eggs
2 TSP. Vanilla
2 & 1/4 Cups Flour
1 & 1/4 TSP Baking Powder
1 TSP Salt
2 TSP Cinnamon
1 Cup Plain Yogurt
2 Cups Canned Peaches drained & mashed, I used my potato masher & smooshed the peaches until they were chunky but not completely pureed.
Preheat oven to 350 Degrees & spray a 9x13 pan with baking spray.
Combine the flour , salt, baking powder, & cinnamon until mixed well. In mixing bowl beat butter until fluffy, add sugar beat again, add eggs & vanilla & beat again. Now starting with the flour mixture beat in about 1/3 of it into the batter. Now add 1/3 cup of yogurt & beat again. Go back to the flour add more beat in then yogurt & back until everything is added & beaten well. Now beat in the peaches. Spoon batter into your pan & smooth it out evenly. Bake for about 35 minutes. Yest cake with a toothpick  to be sure cake is done. No wet batter should be sticking to the toothpick! Remove from oven & let cool. I frosted mine with the following frosting.
FROSTING:
1/2 Cup Softened Butter
2 TSP Vanilla
3 Cups Powdered Sugar
Milk enough to get the spread-ability you like
Dash or 2 of Salt
1 Tsp Cinnamon

Beat Butter  until fluffy. Add vanilla, about 1/2 the sugar, the cinnamon & the salt. Beat adding milk as needed. Add remaining sugar & beat. Use more milk if you need or add more sugar if you want a thicker frosting! DELICIOUS!

Creamy & Cheesy Chicken Ringers Casserole

                                                                         
This is a delicious meal. Creamy, cheesy with rice & veggies! Easy to whip up too! Makes a nice big 10 x 15 deep casserole!

2 lbs  Raw Boneless Skinless Chicken Breast cut into bite sized pieces
6 Cups Cooked Rice
1 Stalk Celery Chopped
1 Small Onion Chopped
8 oz. Can of Sliced Mushrooms drained
2 Cans 10 & 1/2 oz 2  Campbell's' Cream Soup I used Cream of Chicken with Herbs & Cream of Mushroom
1/2 Bag Frozen Peas & Carrots about 1/2 lb
2 Cups Shredded Cheese I used 6 Italian Blend but use your favorite!
1 Bag Frozen Onion Rings
Parsley Flakes to sprinkle on top! 
Mix the chicken, rice, & veggies together right in your casserole dish. Stir the 2 soups together & now mix that into your chicken & rice mixture.  Smooth it evenly in your casserole. Now top with the cheese & then the onion rings! Now sprinkle the top with parsley. Cook in a 350 degree preheated oven for 1 hour. Serve hot with crusty bread & or salad! YUMMY! makes 6 large servings!

Shepherds Pie My Mom's Version!

                                                                         
My Mom's Shepherd Pie brings back good times of childhood! Piled high with mashed potatoes too! Simple eats but good!

1 Pound Raw Burger, I use Turkey Burger but Beef is what Mom used.I am allergic to Beef now so Turkey works for me.
1 Pound Frozen Green Beans
1 Large Onion Chopped
Chopped Garlic if you wish
Salt & Pepper if you wish
Chopped Parsley
1 Can Tomato Soup do not dilute
Leftover Mashed Potatoes for on the top 3 to 4 cups. If no leftover mashed potatoes just mix up some instant! If using Leftover Mashed Potatoes stir in 1 beaten egg to give them some spread-ability
Option: 2 Cups of Shredded Cheese that you can spread over the meat mixture then top with mashed potatoes. I sometimes do this & I use shredded Cheddar!

 In a deep casserole or pie pan mix all the ingredients, except the Mashed Potatoes, together. Stir well to combine!  Now slather the to with the Mashed Potatoes & sprinkle with parsley. Bake in a preheated 350 degree oven for 1 hour. Serve piping hot! Add rolls, crusty hot bread or a salad & you have a great meal! Thanks Mom, for teaching me how to cook!

Cheese Pinwheel Dinner Rolls

                                                                         

My Cheese Pinwheel Dinner Rolls are soft & gooey with melted cheese! These are great with any main course but very nice for breakfast & brunch too! 

This recipe makes 14 large dinner rolls!
3/4 Cup Scaled Milk, I put mine in the microwave on high for 1:45 minutes to scald! Use a deep bowl or mug.
1/4 Cup Sugar
3 TBS Shortening
1&1/2 TSP Salt
1 Packet Yeast
1/4 Cup Lukewarm Water
1 Egg
3&1/2 Cups Flour
2 Cups Shredded Cheddar Cheese or use your favorite shredded cheese
2 TBS Parsley Flakes

                                                                    

Scald the milk then add shortening, sugar, & salt, stir until shortening melts. Set aside until lukewarm. Stir the yeast in the water then beat in the egg, as soon as the shortening & milk mixture is lukewarm beat in the yeast egg mixture, I just use a fork. Now with heavy spoon mix in the flour about 1 cup at a time until it is all mixed well. Dump out onto a lightly floured surface & knead lightly for about 5 minutes. Put into a deep greased bowl & cover, sit in a warm place until doubled. I turn my oven on to warm & as soon as it is up to temperature I turn it off & then put the dough the off oven to rise. It took about an hour to double. 
Once double dump out onto a lightly floured surface & roll out in a rectangle about 10 inches by 15 inches. Cover surface with the shredded cheese  & then roll up into a log like you would for cinnamon rolls. Slice in about 1 inch slices making 14 rolls. Lay face down on a non stick baking sheets & sprinkle the tops with parsley flakes. Bake for 15 minutes in a preheated 425 degree oven! Serve warm!
